Tortellini Soup with
Italian Sausage &
Spinach
1 tbsp Vegetable Oil or Olive Oil 1 lb ground Italian Sausage 1/2 c Onion, diced 1 tbsp Minced Garlic 28 oz Crushed Tomatoes 32 oz Vegetable or Chicken Broth 2 tbsp Fresh Chopped Basil Salt and Pepper, to taste 9 oz Refrigerated Tortellini 2 c Packed Fresh Spinach |
Heat a large, heavy bottom pot over medium-high heat. Heat oil and add diced onion. Saute until onions are soft. Crumble Italian sausage and garlic with onion, cooking until no longer pink. Stir in crushed tomatoes, broth, basil, salt, and pepper. Bring to a boil and reduce heat to low. Cover and simmer 20-30 minutes. Add tortellini and spinach and simmer about 10 minutes, until pasta is tender. Serve with parmesan cheese. |
